Gyros are one of my favorite foods. They taste amazing, are super easy to make, and are inherently healthy. It’s one of those meals you can spend a little time preparing on Sunday to feed you for the entire week. The only thing that requires any cooking is the chicken and the rest can be pieced together the same day you eat it. In my opinion these are best eaten cold so they’re a perfect meal for busy days.

Ingredients

  • 1 lb Chicken Breast, boneless, skinless
  • 3 Garlic Cloves, minced
  • 2 Tbsp Coconut Oil, melted
  • Juice of 1 Lemon
  • 1 Red Onion, thin sliced
  • 1 Cucumber, thin sliced
  • 1 Tomato, chopped
  • 1 Tbsp Dried Oregano
  • 1/2 cup Chicken Stock
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • Cilantro to Taste
  • Pre-made Tzatziki Sauce
  • Feta Cheese, crumbled
  • Naan Flat Bread

Directions

  1. Toss your Chicken into a slow cooker.
  2. In a bowl, mix together Garlic, Coconut Oil, Lemon Juice, Oregano, Chicken Stock, Salt, and Pepper. Once well mixed, pour over the Chicken.
  3. Cook on low for 6-8 hours or high for 4-6.
  4. Once your Chicken is done cooking, use two forks to shred together with the juices. Store the chicken in the refrigerator.
  5. When you’re ready to eat, simply place your Chicken on a Naan Flat Bread, top with your veggies (can be pre-cut earlier in the week to speed things up), and then top with Tzatziki Sauce, Feta, and Cilantro to taste.
